In homage to the Mexican and Latino people of El Paso, I submit this simple but delicious recipe for smoked tofu tacos.
Dave's chipotle Tofu Tacos with blue corn tortillas
1 package Taifun Smoked Tofu
1 packet Cool Chile company Blue Corn Tortillas
2 ears of fresh sweetcorn (stripped from the cob with a knife)
1 onion
3 or 4 large chestnut mushrooms
Fresh coriander (cilantro), chopped.
2 chipotles in adobo
Chipotle Salsa
1. Dice the two chipotle chiles very fine until they're almost like a paste.
2. Fry them with the onion, mushrooms and sweetcorn in olive oil for a few minutes until the onions are soft.
3. Chop up the piece of tofu into bite-size pieces and fry some more until everything is starting to caramelise.
4. Meanwhile heat the blue corn tortillas on a cast-iron skillet. They only need a minute on each side until they're hot and soft.
5. Place the fried stuff in a tortilla, top it with some coriander (cilantro) and some salsa, and enjoy!
